however, in the meantime, can anyone tell me why so many people google "reheating pancakes" and why i've apparently become the internet expert on such things? (ok, not THE expert, but google ranks me as #3. on the whole internet...) out of the top 40 or so ways that people (who dont know me in real life) find this blog, nearly half of them are some form of the google search on how to reheat pancakes - and they end up with a recipe for lemon-ricotta pancakes instead of an answer.
therefore, if you are someone who showed up here looking for answers, well, thanks for stopping by (and please bookmark me cause i'm fabulous) but really, i'm no expert. i did it once, but that could have been dumb luck... I mean, i'm the girl who forgot to refrigerate her cheese and eggs last thursday, but then proceeded to eat them anyway and then paid dearly for it... clearly i'm no expert on food preservation...
Therefore, as a PSA - here's the scoop from the Hungry Jack website - much more of a pancake authority than i could ever be...
Question: What is the best way to store leftover pancakes and waffles?
Answer: For best results, wrap cooled pancakes or waffles in plastic wrap
and place in an airtight bag. Store in the freezer. It is easer to remove
individual pancakes if you separate them with waxed paper or foil before
freezing.
To reheat pancakes, stack two-to-three pancakes on a microwave-safe plate and microwave on HIGH for 60 to 90 seconds.
